Granola Bars

This is our latest favorite recipe for granola bars. This last time it made 30 bars. I wrap or bag them separately then freeze them. We like to grab them for a car or hike snack and pop one in Jay's lunch every day. I got this recipe from a friend (thanks Amy!) and adapted it just a bit.

Chewy Granola Bars
1 cup honey
1/2 cup butter
1 cup brown sugar
1 1/2 cup peanut butter
8 cups oatmeal (half quick and regular)
2 cups rice krispies or other cereal (crush it if big like fiber one)
1 bag chocolate chips (milk are yummy)

Combine the honey, butter and brown sugar in a saucepan. Heat over high heat, stirring occasionally. Bring it to a boil, and boil for 2 minutes. Remove from heat, and add the peanut butter. Stir in the oatmeal and cereal. Then add chocolate chips. Spread in a greased 15x10 pan (big cookie sheet). Let them cool and then cut into bars. Package and freeze.
